Instructions
Add all ingredients to a blender with 1 cup of ice. Blend until smooth and frosty. Pour into a hurricane glass or other tall glass. Garnish with a pineapple wedge, maraschino cherry, and/or cocktail umbrella. For an extra fancy presentation, rim the glass with shredded coconut.
The amount of grenadine can be adjusted to achieve your desired shade of pink. Start with a small amount and add more as needed. Keep in mind that grenadine is quite sweet, so adding too much may make your drink overly sweet.
Alternatively, you could use a splash of cranberry juice or strawberry syrup to color the drink pink. However, these options will add their own flavors to the mix, while grenadine is a more neutral option that won’t significantly alter the taste of your Pink Flamingo Piña Colada.
Variations
Feel free to adjust the proportions to your taste. For a sweeter drink, add a bit more coconut cream or pineapple juice. For a stronger cocktail, increase the rum. You can also experiment with different types of rum, like coconut rum for even more coconut flavor.
If you don’t have coconut cream, you can substitute heavy cream or even ice cream for a richer drink. Freshly squeezed lime juice provides the best flavor, but bottled lime juice works in a pinch.
For a non-alcoholic version, simply omit the rum. You may want to add a splash of coconut extract or coconut syrup to boost the coconut flavor.
Making big batches for a party? Mix everything except the ice in a large pitcher or punch bowl, then blend with ice in smaller portions. This lets you prep most of the recipe ahead of time.
