- Coconut flakes (100 grms)
- Coconut milk (120 grms)
- Glutinous rice flour (80g)
- Potato flour (40 grms)
- Egg yolk (1)
- Whole eggs (2)
- Sugar (100grms)
- To start, combine coconut flakes, sugar, glutinous flour, and potato flour in a mixing dish and stir briskly to combine.
- After that, add 120g of coconut cream and 2 eggs to the mix and completely, combine everything until it’s as smooth as possible.
- Pour the mixture into a nonstick baking pan. It is recommended to use a dish that is small enough that the mixture is 1/2 inch deep, the cake will rise slightly during cooking, but it shouldn’t be too thick.
- Put the cake in the oven and bake for 20 minutes at 220 degrees Celsius. After 20 minutes, remove the cake from the oven and brush the top with an egg yolk.
